Abstract:The basic chemical composition of 18 carcasses of chicken broilers, coming from the retail trade shops in Warsaw, being purchased in 2010, was examined. On the grounds of Feder's number, characterizing chemical composition of breast muscles, three carcasses containing ”foreign water” were distinguished. W/B was equal to 3.61, 3.46 and 3.44 and exceeded boundary value of 3.40, being established in the Commission Regulation (EC). Median of value of W/B in breast muscles amounted to 3.27. When making the balance of chemical components of all elements, the content of protein (B), water (W) and fat(T) in whole carcasses was calculated. Ten results revealed higher water content compared to physiological water level and 8 results showed lower content. The highest water content was found in 4 carcasses, including 3 carcasses, distinguished in W/B test concerning breast muscles. The content of foregin was estimated on 4.2 percent, 3.9 percent, 2.4 percent and 2.3 percent.
